1st Course

Crab Fat & Abalone Bún Rieu

Stone crab, abalone, mint, water spinach, rice 

2nd course

Bún Mang Vit

Duck Confit, bean thread & cilantro terrine, rice puffs, smoked bamboo dust, duck consommé

3rd Course

Bún Mam, deconstructed

Fermented and smoked lemongrass fish soup, sweet shrimp nigiri perilla wrap with shrimp fat mouse and black rice, fermented eggplant & ginger

4th course

Bo Kho (beef stew)

Bo Kho Dip, beef shank, baguette, carrot, daikon, culantro

5th Course

Che Ba Mau (Rainbow ice) Tarte

Mung bean, red azuki bean, pandan jelly, coconut cream chantily

Add a wine pairing or cocktail for an additional fee, or order a la carte on arrival. Gratuity is not included. Tickets are non-refundable, but you may transfer them.

Optional cocktail pairing includes a mixture of curated alcoholic and non alcoholic beverages and will be equal to having 3 cocktails. Optional wine pairing will be the equivalent of 3 glasses of wine. A la carte beverages will be available for purchase as well.

Chef Nancy is unable to offer menu substitutions and asks for you to enjoy each course fully as she intended.

Chef Nancy’s Bio


Chef Nancy Nguyen has spent her life surrounded by the culinary arts. From her grandmother owning a Pho shop in Vietnam,  her fathers background as a chef and her mothers brilliant kitchen skills, the beauty of cooking Vietnamese cuisine was always part of her life. After over a decade of working in the creative world as an art director, Nancy began focusing her creative talent as a personal and catering chef, in her home city of Philadelphia. After extensive traveling the world experiencing culinary and life adventures in many parts of the world, Nancy moved to New York City, and started the Vietnamese food brand, Beaucoup NYC @beaucoup_nyc during the pandemic and began showcasing traditional Vietnamese cuisine to the 5 boroughs at pop ups and dinners. During the first year, Beaucoup was mentioned in the Bushwick Daily of Michelin recommending Vietnamese food, as well as Infactuation NYC amongst other press mentions. 

Nguyen continued her skills fine dining at Resident, a speak easy fine dining group in nyc, and at other kitchens in New York City. 

Chef Nancy now works at Eleven Madison Park, one of the top restaurants in the world . Her culinary mission now is to elevate Vietnamese cuisine with traditional fine dining techniques while preserving Việt flavor profiles and execution.

During her free time, she finds herself happiest with family, friends, her dog Yogi and at the archery range.
